Last Saturday

Last Saturday was lovely and sunny. J and I started the day with yummy homemade pancakes with real maple syrup. 




















After breakfast we roamed around Whyte Ave. When we were bored and mighty proud that we managed to not spend any money, aside from the market and a few coffees, we decided to head home for supper. 

I made us some lettuce wraps – so yummy and fresh! It was also so easy. 

Here's how:
Chop up some carrots, green onions, yellow pepper, cucumber and any other vegetables you like. Wash some butter leaf lettuce. Top the lettuce with chow mein noodles, veggies, some miso gravy, (we used the famous Naam miso gravy), cilantro and peanuts then roll and devour. Oh yes and we added some grilled spicy tofu but you could use chicken or just veggies and it would still be delightful. 


Here's the tofu marinade for those who may be interested:  (T=Tablespoon, t=teaspoon)
- 350 pkg extra firm tofu (press it before you marinate) 
- 2 T soy sauce
- 2 t ground ginger
- 2 t hot chili-garlic sauce
- 2 t freshly squeezed lime juice
- 1 t chili powder
- 1 t brown sugar

        Yum yum yum. Yah, that Naam gravy is awesome : ) I have a dream to one day make homemade poutine with that gravy. Maybe slightly less healthy than salad rolls.
